kurkuri fish fry

Today's menu say fish fry! And you will make this job at your home within few minutes . Follow the instruction and make the most delicious fish fries that your friends have ever eaten!




Ingredients

Any fish in full or sliced 1 kg
Chilli Powder 2tbs
Coriander Powder 1 tbs
Turmeric powder 1 tbs
Rice flour 2 tbs
Gram flour (besan) 1 tbs
Salt
Lime
One large onion

Masala

Mix Chilli Powder, Salt, Coriander Powder, turmeric powder, rice flour, gram flour with lime juice to make a paste.
Add more lime juice to achieve the consistency of a loose paste.

Procedure
  •  Apply the masala to the surface of the fish .
  • Place Flat pan ( tava ) on stove and add 2 spoons of oil
  • As soon as the pan gets hot, drop the pieces of fish on it
  • Add more oil, if the pieces seem to get stuck to the pan. Fry for 5
  • minutes.
  • Reverse the direction of the fish / slices and leave for another 5
  • minutes
  • Note ( In these 10 minutes, the fish must be sufficiently cooked ). All the extra masala, if any is left over, can be added on top of the fish / slice,
  • while it is getting fried,remove fish and place on a plate.
  • Garnish with Onions chopped in the shape of rings ,a slice of lime and green chutney. ( to make green  chutney -take one tomato, coriander leaf, green chillies, two cloves of garlic ,salt and make a fine paste.)

Dum Aloo (Potatoes) Dahi wale



Friend today I am sharing a very tasty and easy recipe, which I have made. Potatoes are easy available at everyone’s home.  So when the guest will come without notice why not you try this…


Ingredients



250gms Aloo (Potatoes)small in size
Oil for deep frying
1 large Onion (finely chopped)
140 ml curd
1 cup hot water  
1tsp garam masala powder
Salt to taste
2 cups water
Roasted cashew nuts
Spices
2 bay leaves
1 tsp coriander powder
1 tsp turmeric powder
2 green cardamoms
1piece cinnamon stick
Paste
1 large onion (chopped)
12 flakes garlic
2 tbsp ginger
6black peppercorn
2 dry red chilies

Method
  • Scrape the aloo (potatoes), prick all over with a fork and soak in the water with little salt for 2 hours.
  • Dry the potatoes on a cloth and heat the oil.
  • Deep fry the potatoes until golden brown. Drain and set aside.
  • Heat the measured oil in a pan, add bay leaf ,cinnamon ,cardamoms and onions fry till brown.
  • Grind the paste ingredients to a fairly smooth paste and  add into  the pan.           
  • Now add coriander and turmeric powder fry until golden.
  • Cook for 10 minutes. add curd and salt.
  • Add the aloo (potatoes) and hot water and stir over a low heat for 5 minutes.
  • Sprinkle garam masala and cook for few minutes.
  • Garnish with roasted cashew nuts and coriander leaf.
  • Serve with any type of chapatti or poori.

Yummy chicken 65




In this festive season , why not try something different. I am going to share some of my favorite recipe chicken 65 , which is very tasty to eat and easy to cook. You can serve it as a starter  . I am sure everyone will become a fan of your cooking.


 Ingredients -
500gm Chicken thigh, boneless cut into 1” pieces
1 ½ tsp   Garlic paste
1 ½ tsp   Ginger paste
1/4 cup   Oil
2 ½ tsp   Salt
2 ½ tsp   Red chilli powder or(chilli paste)
2 tsp   Cornflour
1 cup   Curd, whisked
2          Green chillies slit
3 tsp    Lemon juice
½ cup   Curry leaves
2           Onions cut into rounds

 Method -

  • Take a bowl and mix the ginger-garlic paste,2 tsp oil, chilli powder and salt with a little water to form a thick paste.
  •   Add chicken pieces to the batter, marinate for about 1 hour.
  •   Mix in the cornflour, spread on a tray. Cook in pre heated CONVECTION mode on 220`c for 12 minutes, turning once, remove.
  •   Place the remaining oil and curry leaves in a bowl, Microwave on High for 2 minutes.  
  •   Add chillies, curd and ½ tsp salt, stir well.
  • Microwave on 650 w for 4 minutes, remove.
  •   Add lemon juice and chicken pieces, microwave on 650 w again for 1 minute,  remove. 
  •     Mix well, Garnish with onions.

Stuffed tomato in my style



Ingredients:



5-6 medium size Tomatoes                              
Chopped Coriander leaves
2 Green chili (finely chopped)                                    
1/2tsp Red chili powder to taste.                                
1Onion chopped
1tsp Sugar                                                                    
Salt to taste                                                                 
1/2tsp Gram Masala
1/2 tsp Turmeric powder
1/2tsp Coriander powder
1tbsp Fresh cream
1 tbsp grated cheese
1 tbsp oil

     For filling-
100-150gms Paneer grated or mashed
 Finely chopped Coriander leaves                              
 ½ tsp Garam masala
 Salt to taste
1 tsp Black pepper powder                                                                                                                                                                                                                                   ½ tsp Sugar                                                           
1 Onion finely chopped

Method:
  • Wash the tomatoes and set dry.
  • Cut the top of tomato  like a cap. Gently scoop out the centers . Keep aside the scooped portion and chop the cut tops .
  • For gravy ,Heat oil in a kadhai add chopped onions and green chilies till tender.
  • Now add all dry masalas and fry for a minute.and then the pulp and chopped tomato and fry for a minute more.
  • Add sugar and salt.
  • Now add fresh cream.
  • Take paneer in a bowl.
  • Add the whole filling ingredients.
  • Fill tomatoes with the mixture.
  • Take gravy in a microwaveable bowl , Now add filled tomatoes in gravy.
  • Top with grated cheese and chopped coriander.  place it to a cooker container . pressure cook for one whistle. (or you can also bake it in a hot oven at 200 degree c for 20 minutes.)
  • Serve the stuffed paneer tomato hot.
